Baked Egg in Avocado with Cowboy Caviar Lettuce Wraps
Resourceful dinner tonight. What do you do with a ripe avocado and eggs about to expire? Bake them together. Then grab your backup canned black beans, corn, olives, etc. for impromptu cowboy caviar. Then use your kale leaves as lettuce wraps for the cowboy caviar. I feel rather ingenious.
Baked Egg in Avocado:
- 1 halved avocado (leave skin on), scoop out a little more to make space for egg
- 2 eggs
- Salt & pepper to taste
Crack eggs into pits of avocado. Top with salt and pepper to taste. Bake in preheated oven at 325F for 15 minutes.
My Cowboy Caviar rendition tonight:
- 1 can black beans
- 1 can corn
- 1/3 c. chopped black olives
- 1/2 of a chopped red pepper
- 1 c. chopped mushroom
- 1/4 c. chopped yellow onion
- 1 garlic clove, minced
- 2 tbls. apple cider vinegar
- 1 tbls. grapeseed oil
- 1 tbls. hot sauce
Salt and Pepper to taste
Combine all ingredients and stir around to toss in vinegar and oil.
Spoon on to kale leaves as a lettuce wrap. Top with more hot sauce if desired.
